How to Make Sushi Rice (Brown and White)

Making rice is really simple. In fact, it’s so simple that you don’t even need a rice cooker. For this project all you need is SHORT GRAIN brown or white rice, water, a pot (preferably nonstick so the rice doesn’t burn), rice vinegar, rice seasoning and sugar.

Instructions for WHITE rice: Measure out 3 level cups of rice and put it in the pot. Add 3 1/2 cups water to the pot and give the rice and water a swirl (Hint: Place your index finger into the water until your fingertip just brushes the rice. The water should come up to the first line on your finger). Bring the water and rice to a boil. Once the rice reaches a boil turn down the heat to low and let it simmer for 20 minutes. After 20 minutes, turn off the heat and fluff the rice while pouring in the mirin. You want to fluff the rice until the rice isn’t too clumpy and it glistens.

Instruction for BROWN rice: Measure out 3 level cups of rice and put it into the pot. Add 4 1/2 cups of water to the pot and give the rice and water a swirl. Bring the water and rice to a boil. Once the rice reaches a boil turn down the heat to low and let it simmer for 40 minutes. After 40 minutes, turn off the heat and fluff the rice while pouring in the mirin. You want to fluff the rice until the rice isn’t too clumpy and it glistens.

Mirin

NOTE: Mirin is light fermented golden colored liquid made from rice. It adds a nice sweetness to the rice and keeps it soft. Kikkoman sells a bottle of mirin, which you can find in most Asian food sections.
